Annie's Simple and Easy Amish Recipes.
Fat Free Muffins
1-1/4 cup flour, white or wholewheat
1 cup oat bran or oatmeal
1 1/4 teaspoon cinnamon
1 tablespoon baking powder
1/2 cup evaporated skim milk
1/2 cup defrosted apple juice concentrate
1 egg or 2 egg whites or equivilent
1 ripe banana, mashed or 1/2 cup applesauce
1 cup fruit, berries, diced peaches, pears, apples, raisins, whatever
1/2 cup nuts if you like
Instructions
Mix dry ingredients. Stir together wet ingredients except 1 cup fruit. Blend together wet and dry, add fruit and nuts. Bake at 425 degrees for 17 minutes.
