Two Egg Sponge Cake
2 eggs
1 cup sugar
1 cup flour
1 pinch salt
1 level teaspoon baking powder
3/8 cup boiling water
lemon extract to suit taste.
Instructions
Beat yolks until thickened, add sugar gradually, add hot water, sift in salt, baking powder and flour. Fold in stiffly beaten whites and lemon extract. Bake in a moderate oven in ungreased tin, and when done turn upside down until cool.
