| Zucchini Fritters |

1/3 c. Bisquick 1/4 c. Parmesan cheese 1/8 tsp. pepper 2 eggs 2 Tbsp. milk 2 c. zucchini, shredded 2 Tbsp. melted butter |

| Instructions |
| Mix together Bisquick, pepper and cheese. Beat eggs. Mix in milk. Add Bisquick and cheese mixture. Mix well. Fold in zucchini and melted butter. Drop by tablespoon into deep hot fat. Fry until golden brown. Drain on paper towel.
