Blanch fresh broccoli spears in boiling water just until the water returns to a boil. Drain broccoli, then fry in hot wok with 2 tablespoons oil for about 1 minute. Turn cooked broccoli out onto a serving platter. In a clean wok, heat 3 tablespoons oil and add the drained sirloin cubes, browning quickly over high heat for about 2 minutes. Serve beef over broccoli with rice. Serves 4.
