1 lb. ground beef
1 c. chopped onion
1/4 c. chopped green pepper
1 tsp. salt
1/4 tsp. pepper
1 tsp. chili powder
5 c. sliced zucchini or summer
squash
2 large tomatoes, peeled and
chopped
1 c. fresh corn (or frozen)
1/4 c. chopped parsley
Brown beef, onion and green pepper in skillet, add remaining ingredients. Cover and simmer 15 minutes or until vegetables are tender. Makes 6 servings.
