Hawaiian Fruit Cake
2 cups granulated sugar
2 cups all purpose flour
2 large eggs
2 tsp. baking soda
1 20-oz can crushed pineapple, undrained
1 cup macadamia nuts, chopped (can substitute with walnuts)
1 cup unsweetened coconut
2 tsp. pure vanilla extract

Instructions
Combine all ingredients and mix together well. Pour into 13x9x2 inch baking pan. Bake at 325 degrees 35-40 minutes or until toothpick inserted in the center comes out clean.


Top with a cream cheese icing.


Cream Cheese Icing


1 stick unsalted butter, softened
1 8-oz pkg cream cheese, softened
1 1/2 cups powdered sugar
1 tsp. pure vanilla extract


Combine all icing ingredients and beat with a mixer until smooth. When cake is completely cooled, spread with icing.
