German Meatloaf

1-1/2 lbs. ground beef

2 eggs, beaten

1 tsp. salt

1 med. onion, chopped

1/4 tsp. pepper

1 1/4 c. crushed soda crackers

1 c. milk

1 lg. head of cabbage

1 can cream of mushroom soup

Combine first 7 ingredients. Form into loaf. Separate leaves of cabbage and cook several minutes (until begins to soften) in boiling salted water. Drain. Wrap meatloaf with several layers of cabbage leaves. Place in 2 quart casserole dish and top with 1 can cream of mushroom soup and 3/4 can water. Bake at 350 degrees for 1 1/4 hours .

Cabbage can be eliminated if you desire.
