Microwave Meatloaf with Brown Sugar Glaze

2 pounds lean ground beef

2 eggs, beaten

2 slices fresh white bread

1 envelope onion soup mix

2 tablespoon milk

1 teaspoon minced fresh parsley

1 teaspoon prepared mustard

1 (8 ounces) can tomato sauce, divided

TOPPING:

1 tablespoon brown sugar

1 tablespoon vinegar

Instructions

Combine all ingredients except tomato sauce and topping ingredients. Add 1/4 cup tomato sauce to meat mixture. Make into a loaf and put into a microwave loaf pan. Cook on high 13 to 15 minutes, rotating once. Meatloaf is done when it pulls away from side of pan. Let stand for 5 minutes. TOPPING: Mix sugar, remaining tomato sauce into a 2-cup glass measure and cook on high 1 1/2 minutes and stir. Pour half over loaf. Serve remaining sauce as gravy. Total cooking time: 14-1/2 to 16 minutes in 1000 watt microwave.
