Spanish Style Turkey Meatballs
1 package ground turkey
1 cup soft bread crumbs
1/4 cup finely chopped onions
1/4 cup finely chopped celery
1 1/2 teaspoon Worcestershire sauce
1 egg
1 teaspoon chili powder
1 teaspoon salt
1 clove minced garlic
1 teaspoon ground pepper
1 (10 oz.) can stewed tomatoes
2 1/2 cup thinly sliced zucchini
1 teaspoon dried basil
1 teaspoon dried oregano
1 1/2 teaspoon sugar
1 1/2 tablespoon cornstarch
1 (13-3/4 oz.) can beef broth
4 cup hot cooked rice
Instructions
Preheat oven to 375 degrees. Combine turkey, bread crumbs, onion, celery, Worcestershire sauce, egg, garlic, chili powder, salt, pepper. Form into 12 meatballs. Place on 9 x 13 inch greased baking pan. Bake for 20 minutes. In a saucepan, combine remaining ingredients except for rice, and heat to simmer. Cook for 5 minutes, stirring occasionally. Pour tomato mixture over meatballs and
bake 10 minutes longer. Serve over rice.
Makes 4-6 servings.
