Turkey Meatloaf Florentine
1-1/2 Pounds ground turkey
1/2 Cup cream of wheat
1/2 Cup egg substitute
1/2 Cup ketchup
1 Clove garlic, minced
1 Teaspoon dried basil leaves
1 10 oz pkg chopped spinach, thawed, drained
1/2 Cup chopped red pepper
1/4 Cup minced onion
1 Tablespoon country-style Dijon mustard
1 Tablespoon honey
In large bowl, thoroughly combine turkey, cereal, egg substitute, ketchup, garlic and basil. Stir in spinach, pepper and onion. Shape into 9x4-inch loaf.
Place in greased 13x9x2-inch baking pan. Bake at 350F for 45 minutes. Blend mustard and honey; brush over meatloaf.
Bake 15-25 minutes more or until internal temperature reaches 165F.
Let stand 10 minutes before slicing.
