Ham and Peach Loaf

1/4 cup brown sugar

4 peach halves (canned)

1 cup ground ham

1 small onion, ground

1 egg

2 tablespoons milk

1/2 teaspoon prepared mustard

1 package Jiffy cornbread mix*

Instructions

Sprinkle sugar in greased 8 inch square pan. Arrange peach halves, cut-side down, over sugar. Combine ham and onion and mix with egg, milk and mustard. Spread over peaches. Pour corn batter over meat mixture. Bake 425 degrees for 30 minutes. Reduce heat 350 degrees and bake for 5 minutes. Turn upside down onto serving dish. Makes 4 servings *Prepare cornbread batter using directions on the mix.
