2-3 cups leftover turkey breast, cooked and cut into bite sized pieces 1/4 teaspoon salt 1/8 teaspoon pepper 2 cups sauerkraut, well drained 4 slices fat free Swiss cheese 1 1/4 cups Russian dressing 1 tablespoons chopped parsley
Spray pan with Pam. Place turkey in pan, salt and pepper. Cover turkey with sauerkraut. Pour dressing evenly over all and top with cheese. Cover with foil and bake 1 hour at 325 degrees or until fork tender. Sprinkle with chopped chives to serve.
