Fried Rice with Green Peas
3 strips bacon, diced
3/4 cup green onion, chopped
1/3 cup bell pepper, diced
1/4 cup green peas
1 egg, beaten
4 cup cooked rice, cold
2 tablespoons soy sauce, 1 carrot, shredded
Instructions
Cook bacon in wok or large skillet until crisp. Add green onion, bell pepper, and peas. Stir fry 1 minutes. Add egg and scramble. Stir in rice, cook until heated, gently separating grains. Add soy sauce. Heat through. Toss in shredded carrots.
Serves 4.
