Ground Beef and Green Pea Dish
1/4 cup chopped onion
1 tablespoon butter
1 pound ground beef
2 tablespoons flour
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 egg
1 1/4 cups milk
1 tablespoon butter
1 can condensed consomme
6 small potatoes, quartered
6 medium carrots, halved
1 onion, quartered
1 teaspoon salt
1/4 teaspoon pepper
1 package frozen peas
Instructions
Brown onion in tablespoon butter. Remove from skillet and mix with ground beef and next 5 ingredients. Form into 1 inch balls. Brown lightly in tablespoon butter in skillet, then push to one side. Add consomme, cook, stirring until mixture begins to thicken. Add potatoes, carrot and onion, season. Cover and simmer until vegetables are tender. About 30 minutes. Pour boiling water over peas to separate them, drain and add to skillet. Cook about 5 minutes more. Garnish with parsley before serving. Serves 6.
