1/4 teaspoon salt 3 egg whites 1 3/4 cup sifted confectioners' sugar 1 tablespoon flour 2 cups broken pecans 1 cup chopped dates 1 teaspoon vanilla
Instructions
Add salt to egg whites and beat to a stiff foam. Sift sugar with flour; add to egg whites, one tablespoon at time, beating until very stiff. Fold in nuts, dates and vanilla.
Drop from a teaspoon onto cookie sheet covered with plain paper. Shape into fingers. Bake in 300 degree oven for 30 minutes.
Makes 2 dozen cookies
