Mix walnuts, 1 cup coconut and dates. Mix in 1 egg. Beat remaining egg and vanilla, add to first mixture. Mix in melted butter and brown sugar. Roll 1 teaspoonful of dough at a time in remaining coconut and drop into a well greased cookie sheet. Bake 10 minutes or until brown at 300 degrees.
These cookies will keep well in a covered container for about a week.
Makes 4 1/2 dozen.
