2 cups sifted flour 2 teaspoons baking powder pinch of salt 3/4 teaspoon grated lemon rind 1/2 cup shortening 1 cup sugar 1 egg 1/4 cup lemon juice 1/4 cup water
Instructions
Sift flour, baking powder and salt. Blend rind and shortening; add sugar gradually, cream well. Add egg, lemon juice and water; beat well. Add dry ingredients and mix thoroughly. Drop by level tablespoons onto greased cookie sheet. Bake at 400 degrees for 8-10 minutes. Do not stack or store until cold.
