Christmas Cookie Cutter Cookies

3/4 cup shortening
1 cp sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon salt
Add green or red food coloring (optional)

Instructions

Mix shortening, sugar, eggs and vanilla. Blend in remaining ingredients. Cover and chill at least one hour. Roll dough to 1/8 inch thickness. Cut with cookie cutters. Bake on ungreased baking sheet at 400 degrees F 6-8 minutes or until lightly browned. Frost if desired.

Makes 2-5 dozen (depending on size of cookies).
