Creamy Green Chile Soup
1 c. chopped onion
1 c. chopped celery
2 cloves garlic, minced
1 tbsp. butter
3 tbsp. flour
1 tbsp. chicken flavored bouillon
granules
2 c. hot water
2 c. half & half
1/4 tsp. chile powder
2 (4 oz.) cans chopped green chiles
1 c. shredded Cheddar cheese
3 oz. Velveeta cheese, cubed
Instructions
Combine onion, celery, garlic, and butter in a large saucepan. SautÈ until tender, about 5 minutes. Stir in flour. Dissolve bouillon in hot water. Gradually add bouillon, half & half, chili powder, and pepper to mixture, stirring well. Cook for 8-10 minutes or until thickened slightly. Stir in green chiles, 1/2 cup Cheddar cheese, and Velveeta. Continue cooking until cheese is melted. Top each serving with remaining Cheddar cheese.
Yield: 6 cups.
