Cranberry Coca Cola Baked Brisket
1 (15 oz.) can jellied cranberry sauce
1 envelope onion soup mix
1/4 c. catsup
4 oz. Coca Cola
4 lbs. brisket of beef
Instructions
Mix first four ingredients; set aside. Bake brisket, uncovered, without the sauce, at 475 degrees for 1/2 hour. Remove from oven, pour sauce over meat, reduce heat to 275 degrees. Cover tightly with 2 layers of aluminum foil and cook 4 to 6 hours. Chill in juices. Slice again grain when cold. Put into heat proof serving dish with juices to reheat. Cover with foil and heat for 45 minutes at 350 degrees. If you chose to cook this while sleeping, cook brisket at 225 degrees for 8 hours. Chill during the day, then slice and reheat in time for dinner.
Serves 6.
