Baked Stuffed Bass
1 to 1 1/2 pound bass
salad oil
1 /4 teaspoon pepper
1 teaspoon salt
flour to coat
1 onion, chopped
2 tablespoons bacon fat
2 slices bacon, cooked and crumbled
1 cup dried bread crumbs
1 hard cooked egg, diced
1 tablespoon butter
1 teaspoon parsley, chopped
1/4 teaspoon thyme
1 teaspoon Worcestershire sauce
3 tablespoon chicken broth, cubes
Instructions
Rub fish on outside with oil, pepper, salt and flour. In a frying pan saute onion in fat and add all the other ingredients; stir just until they are moistened. Put dressing inside of fish and close with skewers. Place fish in pan with small amount of water. Bake at 400 degrees for 30 minutes.
Makes 4 servings.
