Baked Flounder with Sweet and Sour Sauce
3 pound flounder fillet
butter
1 cup tomato puree
1 cup water
1 small onion, diced
5 tablespoons sugar
1/4 teaspoon whole allspice
1/4 teaspoon celery seed
1/4 stick cinnamon
3 tablespoons vinegar
Instructions
Spread fish with melted butter. Place on aluminum foil in baking dish. Bake at 350 degrees for 20 minutes or until tender. Combine tomato puree, water, onion and sugar. Put spices in cheesecloth bag; add to liquid. Boil for 10 minutes. Remove spice bag; add vinegar. Boil for 10 minutes. Pour sauce over flounder; simmer for 5 minutes longer.
