Baked Haddock with Creole Sauce
4 tablespoons margarine
4 medium onions, chopped
2 green peppers, chopped
4 cloves of garlic, chopped
2 tablespoons flour
1 (14-15 ounce) can tomatoes
4 tablespoons parsley
1 teaspoon dry thyme
6 tablespoons tomato sauce
2 bay leaves
Salt and pepper to taste
3 pounds halibut
Instructions
Heat fat in skillet over low heat; add onions, green peppers and garlic. Cook until soft, about 5 minutes. Sitr in flour, tomatoes parsley, thyme, tomato sauce, bay leaves, salt and pepper to taste. Cover over low heat for 30 minutes. Salt and pepper fish; place in greased pan. Pour tomato mixture over fish. Bake at 350 degrees for one hour or until done.


Makes 6 servings
