Crab Cheese Rarebit
2 slices bacon, fried and diced
1/2 cup onion, chopped
1/2 cup celery, chopped
1 can condensed Cheddar cheese soup
1 (1 pound) can solid paced tomatoes, drained
1 tablespoon lemon juice
1/2 teaspoon sugar
1/2 teaspoon curry powder
1 clove garlic, minced
Tabasco sauce to taste
1 (7 ounce) can crab, drained and flaked
Instructions
Cook bacon, onion and celery in saucepan until vegetables are tender; stir in undiluted soup until smooth. Add remaining ingredients except crab; simmer for 45 minutes stirring occasionally. Add crab; reheat but do not boil.
Makes 4-6 servings.
