Crab Louis
1 cup mayonnaise
1/4 cup heavy cream
1/4 cup chili sauce
1/4 cup green pepper, chopped
1/4 cup green onion, chopped
Salt to taste
Lemon juice to taste
2 heads iceberg lettuce
2 large Dungeness crabs, cracked and shelled
4 large tomatoes, cut in sixths
4 hard cooked eggs, cut in sixths
Instructions
Mix mayonnaise, cream, chili sauce, green pepper, and green onion. Season with salt and lemon juice. Arrange outer leaves of lettuce on 4 large plates. Shred heart of lettuce; arrange in bed of lettuce leaves. Place the body meat over a bed of lettuce leaves. Arrange tomatoes and eggs symmetrically around crab. Top with dressing.
Makes 4 servings.
