Crab Meat Au Gratin
1/2 cup plus 1 tablespoon butter
2/3 cup flour
2 teaspoons salt
2 2/3 cup milk
2 (6 1/2 ounce) cans crab, drained
4 cups celery, chopped
1/2 cup green pepper, chopped
2 pimentos, drained and chopped
2 tablespoons onion, grated
1/3 cup slivered blanched almonds, toasted
4 hard cooked eggs, chopped
1 cup sharp Cheddar cheese, shredded
2 1/2 cups bread crumbs
Instructions
Heat 1/2 cup butter in saucepan; add a mixture of flour and salt and blend well. Heat until mixture bubbles, stirring constantly. Remove from heat and gradually add milk stirring until well blended. Return to heat; cook rapidly, stirring until mixture thickened. Cook 1-2 minutes longer. Remove and discard bony tissue from crab; separate into pieces. Mix crab, celery, green pepper, pimentos, onion, almonds and eggs into sauce. Turn mixture into a shallow 2 quart casserole; sprinkle with cheese. Add bread cubes to remaining butter; toss until coated and spoon onto casserole. Heat in a 350 degree oven for 35 minutes. Garnish with slices of hard cooked eggs if desired.


Makes 8-10 servings.
