2 pounds flounder 3 tablespoons flour 3 tablespoons butter 1/2 teaspoon salt 1 cup milk, scalded 2 eggs, separated Bread crumbs or crushed corn flakes
Instructions
Simmer fish in salted water until flaky. Remove from water; cool and slice. Blend flour with butter until smooth; add salt. Gradually add milk. Stir constantly over low heat until sauce boils. Cook for 5 minutes. Cool. Beat yolks; stir into white sauce. Beat egg whites until stiff; fold into white sauce. Fold in fish. Pour mixture into buttered baking dish or mold. Sprinkle bread crumbs over mixture. Bake in 350 degree oven for one hour.
