Fried Fish in Cornmeal Batter
2 pound fish fillets, cut into serving pieces
2/3 cup Bisquick mix
2 tablespoons cornmeal
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon water
1 egg
Vegetable or olive oil
Instructions
Pat fish dry. Mix baking mix, cornmeal, salt and pepper in one dish. Beat water and egg in another. Dip fish first into egg, then coat with cornmeal mixture. Heat oil (1/8 inch) in skillet until hot. Fry fish over medium heat, turning carefully until brown on both sides, about 10 minutes each side.
6-8 servings.
