2 medium potatoes, peeled & diced 1 small onion, chopped 2 cup water 1/2 teaspoon salt 2 cup milk or whipping cream 8 ounce can small bay oysters 1 teaspoon dried tarragon leaves
Instructions
Simmer potatoes, onion, salt in water for 20 to 25 minutes or until potatoes are done. Mash potatoes in pan add milk, oysters, and tarragon leaves. Heat 2 to 3 minutes more. Add salt to taste.
