French Toast
2 eggs
1/4 cup sugar
1/2 teaspoon grated lemon rind
1 cup milk
1 teaspoon vanilla extract
8 slices (1 inch thick) day old French bread
2 tablespoons butter
Instructions
Beat eggs with sugar in shallow dish. Stir in rind, milk and vanilla extract to blend. Dip bread slices on one side to coat, then turn and soak 30 minutes or covered overnight in refrigerator. Preheat skillet or grill to medium heat. Add butter and heat to sizzling point. Fry bread until brown (about 6 minutes on each side.) Sprinkle with preserves or syrup.
