Candied Fruit Banana Nut Bread
1/2 cup soft margarine
1 cup sugar
1 1/2 cup ripe mashed bananas
2 cup flour
1/2 teaspoon soda
1/2 teaspoon cinnamon
1/2 teaspoon lemon peel
2 eggs
1 tablespoon lemon or lime juice
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup chopped nuts
1/2 cup chopped candied fruits
Instructions
Cream margarine and sugar in large bowl. Add eggs, one at a time, beating well after each addition. Add dry ingredients alternately with lemon juice, gradually, beating well after each addition. Add lemon peel, fruit and nuts. Pour into greased and floured 9"x5"x3" loaf pan. Bake in 350 degree oven for 60 minutes or until toothpick comes out clean. When bread is cool, wrap and freeze.
