Duck with Wild Rice
2 ducks
1 onion, chopped
2 ribs of celery, chopped
1 (5 ounce) package Uncle Ben's Wild Long Grain rice
1/2 cup butter
1/2 cup chopped onion
1/4 cup flour
1 1/2 cups Half and Half
1 tablespoon fresh parsley, chopped
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 (8 ounce) can mushrooms and liquid
1 (4 ounce) package slivered almonds (roasted)
Instructions
Boil duck, onion and celery until tender. Remove meat from bones. Set aside. Cook rise. Set aside. Melt butter and sautÈ onion. Stir in flour; add half and half to make cream sauce. Add parsley and seasoning. Add cooked duck, rice, mushrooms and almonds to cream sauce. Bake mixture in a casserole at 350 degrees F for 35-45 minutes.
Makes 6 to 8 Servings.
