Roast Wild Goose
1 (6-8 pound) young wild goose
juice of one lemon
salt
pepper
1/4 cup butter
1/4 cup chopped onion
1 cup chopped tart apple
1 cup chopped dried apricots
3 cups finely crushed bread crumbs
4-6 slices bacon
melted bacon fat
Instructions
Preheat oven to 325 degrees. Sean the good inside and out with lemon juice, salt, and pepper. In a saucepan, heat the butter and add the onion. Cook until onion is transparent. Stir in the apple, apricots, bread crumbs, salt and pepper. Spoon stuffing into the goose cavity. Tie up the cavity. Cover the breast with bacon slices and cheesecloth that has been soaked in back fat. Put the prepared good breast side up on a rack in a roasting pan. Roast 2 to 3 hours, basting frequently.
Makes 8 servings.
