Crabmeat Au Gratin
2 teaspoons butter
2 cups crabmeat
salt and pepper to taste
2 egg yolks, well beaten
1/2 cups cream or evaporated milk
1/2 cup grated cheese
lemon wedges
Instructions
Melt butter; add crabmeat, salt and pepper and cook 5 minutes without browning. Mix cream or evaporated milk with beaten egg yolks; add to hot crabmeat and cook 4 minutes over low heat. Stir constantly. Pour in to individual ramekins or large casserole; sprinkle cheese over top and bake in moderate oven at 350 degrees until cheese is melted. Serve at once with lemon.
