Stuffed Flounder

1/2 cup chopped celery

1/2 cup chopped shallots

2 cloves garlic, minced

1 stick butter

1 cup seasoned bread crumbs

1/4 teaspoon powdered thyme

4 tablespoons lemon juice

1/2 pound crabmeat

1 tablespoons chopped parsley

1 egg, beaten

Saute celery, shallots and garlic until limp. Add other ingredients and mix thoroughly. Stuff flounders (4 medium) and broil about 3 inches below brolder. Cut flounder in "T" shape; run knife under corners to lift meat from bones to form pocket. Paint pocket with melted butter mixed with lemon juice before stuffing. Put enough water in broiling pan to cover bottom of pan.
