Halibut Souffle in Almond Sauce

1 cup soft bread cubes

1 3/4 cup cream

1/2 pound uncooked halibut, finely chopped

1/2 teaspoon salt

1/4 teaspoon paprika

3 egg whites

1/2 cup sliced almonds

2 tablespoon butter

2 tablespoons flour

1/8 teaspoon pepper

Instructions

Combine bread and 3/4 cup of cream. Cook, stirring constantly, to a paste. Add halibut, 1/4 teaspoon salt and paprika. Cook. Beat egg whites until stiff. Fold into fish mixture. Pour into 7-inch buttered casserole. Set in pan of hot water. Bake at 350 degrees for 45 minutes. Brown almonds in butter; add flour. Cook for 3 minutes. Add 1 cup of cream and remaining seasonings. Stir constantly until thick. Serve almond sauce over halibut.
