Herbed Shad Roe
1/2 cup butter
2 medium shad roe
salt and pepper to taste
1 tablespoon chopped parsley
2 teaspoons lemon juice
2 teaspoons chives, chopped
1 teaspoon tarragon
1 teaspoon chervil
Instructions
Heat butter. Add shad roe and sprinkle with salt and pepper. Cook on both sides for a total of 12 minutes. When lightly browned, place on serving platter. Mix remaining ingredients and pour over the shad roe.
Serves 4
