Shrimp Batter
1 cup flour
3/4 cup water
2 tablespoons lemon juice
2 tablespoons cooking oil
1 teaspoon salt
1/2 teaspoon pepper
2 egg whites, stiffly beaten
Instructions
Mix all ingredients except egg whites. Fold them in just before dipping shrimp for frying. If batter seems too thick add a little bit of water to obtain desired consitency. Fry shrimp after dipping in batter, being careful to keep them separate as your are frying.
