Caramel Pecan Apple Pie
1 cup all-purpose flour
1/3 cup vegetable oil
1 tablespoon sugar
1 tablespoon milk
1 teaspoon salt
1/4 cup packed light brown sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
5 medium tart apples, peeled and sliced
1/4 cup butter or margarine
1/2 cup chopped pecans
1/2 cup sugar
2 tablespoons all-purpose flour
2 tablespoons milk
1 teaspoon cinnamon
Instructions
Preheat oven to 425 degrees. Combine 1 cup flour, oil, 1 tablespoon sugar, 1 tablespoon milk and salt in a bowl. Stir until a soft dough forms. Press over and up the side of a p inch pie plate. Bake for 10 to 12 minutes or until golden brown. Mix the brown sugar, cornstarch and lemon juice in a bowl. Add the apples, tossing to mix. Spoon into the prepared pie plate. Heat the butter in a skillet until melted. Add the pecans, 1/2 cup sugar, 2 tablespoons flour, 2 tablespoons milk and cinnamon and mix well. Bring to a boil. Boil for 1 minute, stirring frequently. Spoon over the prepared layers. Bake for 25 to 30 minutes or until brown and bubbly.
Cool.
Makes 6 to 8 servings.
