Apple Pie with Crumb Topping
1 to 2 1/2 cup apples, peeled, cored and sliced
1/2 cup sugar
9 inch unbaked pie crust
1/2 cup sugar
3/4 cup all-purpose flour
1/3 cup butter
1 teaspoon lemon rind
2 tablespoons sugar
1/8 cup water
1 tablespoon rum extract
Instructions
Mix apples with 1/2 cup sugar and 1 teaspoon cinnamon and pour into crust.
To make crumb topping mix 1/2 cup sugar with 3/4 cup flour and cut in butter. Sprinkle topping evenly over apples. Bake at 450 degrees for 10 minutes. Reduce heat to 350 degrees and bake for 40 minutes longer. Bring to boil teaspoon lemon rinds, 2 tablespoons sugar, 1/8 cup water, 1 tablespoon rum. Pour over individual servings.
Makes 1 9-Inch Pie.
