Pumpkin Cheesecake
2 (3 ounce) packages cream cheese
3/4 cup firmly packed brown sugar
2 eggs
1 1/2 tablespoon flour
1/8 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon ground ginger
1 1/4 cup canned pumpkin
1/4 teaspoon vanilla
1 tablespoon lemon juice
1 (9 inch) graham cracker crust
Sour Cream Topping
Instructions
Cream cheese and sugar together until smooth. Beat in eggs, flour, salt and spices. Blend in pumpkin, vanilla and lemon juice slowly. Pour into graham cracker crust. Bake at 325 degrees for about 30 minutes or until filling is almost firm. Remove from oven; pour Sour Cream Topping over top. Increase oven temperature to 425 degrees. Bake for 3 to 5 minutes or until topping is set. Cool and chill.


Sour Cream Topping
1/8 teaspoon salt
1 cup sour cream
2 tablespoons sugar


Combine all ingredients.
Makes 8 servings
