Light Pineapple Cheesecake
1/2 cup pineapple juice, unsweetened
1/2 cup water
1 cup diet strawberry soda
3 packages unflavored gelatin
1 cup pineapple chunks
1 teaspoon vanilla
1 1/3 cup cottage cheese
7-8 packages Splenda
Instructions
Place juice and water in saucepan. Bring to full boil. Mix soda and gelatin in bowl. Add to saucepan. Add pineapple chunks. Refrigerate for 2 hours or until syrupy. Place in blender; bland. Blend in remaining ingredients. Place in mold and refrigerate for 2 hours.
