Pecan Waffles
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
2 eggs
1 1/2 cups milk
3 tablespoons melted shortening
1/2 cup coconut
Instructions
Sift flour with baking powder and salt. Beat eggs into milk. Stir liquid into dry mixture. Add melted shortening and beat until smooth. Add 1/2 cup finely chopped pecans and 1 tablespoon sugar to batter. Pour batter on waffle iron. Sprinkle pecans on waffle iron on top of the batter before baking. Bake until brown and crisp.
