Mashed Potato Waffles
2 eggs, separated
1 cup buttermilk
1 1/2 cups cooked mashed potatoes
1/3 cup melted butter
1 cup flour
1/2 teaspoon baking soda
1 teaspoon salt
Instructions
Separate eggs, putting whites in one bowl and yolks in a large bowl. Beat yolks and add milk, potatoes and butter. Sift dry ingredients and add to egg-milk mixture. Beat gently until smooth. Fold in stiffly beaten egg whites and bake in waffle iron.
Makes 4 small pancakes.
