Gingerbread Waffles
2 eggs
1/2 cup sour milk
1 cup molasses
1/3 cup melted butter
2 cups flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons ground ginger
1/2 teaspoon ground cinnamon
1 teaspoon salt
Instructions
Separate eggs, putting whites in one bowl. Beat egg yolks, add sour milk, molasses, and melted butter. Beat well. Sift together dry ingredients and add to egg-milk mixture. Blend well, then fold in stiffly beaten egg whites. Bake on hot waffle iron.
Makes 4 waffles.
