Cornmeal Pancakes
1 1/4 cup cornmeal
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1/4 cup oil or melted butter
2 eggs
Instructions
Combine dry ingredients and mix well. Add the remaining ingredients and mix until smooth. Pour onto a hot, slightly greased griddle and cook on both sides until brown. Makes about 2 dozen pancakes
