Potato Pancakes
2 eggs
2 tablespoons flour
1/2 medium onion, grated
1 1/2 teaspoon salt
1/4 teaspoon pepper
6 medium potatoes, grated
3 or 4 tablespoons margarine
Instructions
Beat eggs in large bowl; beat in flour. Add onion, salt and pepper; stir in potatoes and parsley. Heat margarine in heavy skillet. Drop potato mixture by spoonfulls into skillet; flatten. Cook until brown. Turn; cook until brown. Server hot with sour cream or applesauce.
