Sourdough Starter
1/2 cup warm water
1 tablespoon dry yeast
1/4 cup instant mashed potatoes (dry)

Instructions
Dissolve yeast in water and mix in potatoes. Do not use a metal bowl. Allow to stand at room temperature for 3 days, stirring occasionally. On the 3rd day add 1/2 cup flour and 1/2 cup water, stir. After 8 hours add cup flour and 1 cup water. This addition may be made every 8 hours until enough starter is needed for the recipe plus one cup. To keep the starter going, add 1 cup of flour and 1 cup water every eight hours. The starter can be kept indefinitely if stored in the refrigerator, add 1 teaspoon sugar to starter when put in the refrigerator. Starter should be kept at room temperature when being used for any recipe.
