2 eggs, separated 1/2 teaspoon salt 2 cups sourdough starter 1 teaspoon baking soda 2 teaspoons water
Beat egg yolks with salt until thick and lemon colored. Beat egg whites until stiff, adding sugar gradually. Combine egg whites until stiff, adding sugar gradually. Combine egg yolks with sourdough starter. Fold yolk mixture into egg whites. Dissolve baking soda in water and fold into batter. Bake on ungreased griddle.
Waffles: Prepare as pancakes. Before adding soda and water mixture, add 1/2 cup melted butter, then soda. Bake on waffle iron. Makes 9 pancakes or 6 waffles.
