Pecan Waffles
2 cups flour
3 teaspoons baking powder
1/4 teaspoon salt
3/4 cup chopped pecans
3 eggs, separated
1 1/2 cup milk
6 tablespoons shortening or oil
Instructions
Sift dry ingredients; add pecans, beaten egg yolks, milk and shortening. Mix until smooth. Fold in beaten egg whites. Bake on hot waffle iron.
Makes 6-8 waffles.
